1 lime, cut into wedges
1/3 cup fresh mint
2 tbsp of Batey Turbinado Sugar
1/2 cup pineapple juice
4 oz tequila
4 tbsp sparkling water
zest of 1 lime
1/4 cup Batey premium pure cane sugar
2 tbsp coarse salt
Make the lime salt by combining lime zest, sugar, and coarse salt on a plate. Set aside.
In a cocktail shaker, mix the lime, mint and sugar. Add the pineapple juice and tequila. Top with sparking water.
Add ice and shake or stir until combined.
Run a lime wedge around the rim of each cocktail glass, then dip in the lime salt.
Strain beverage into cocktail glass and fill with crushed ice.
Top with fresh mint.
