
Ingredients
Sponge Cake:
️3 eggs
️1 tsp. vanilla extract
️1/3 cup Batey turbinado sugar
️1/3 cup all-purpose flour (no baking powder or leavening agent)
️1/2 tsp. salt
Filling:
️400 ml heavy cream
1/2 cup Batey premium pure cane sugar
️1 tsp. vanilla extract
Peaches or canned peaches in syrup
Soaking Mixture:
1/2 cup evaporated milk
1/2 cup condensed milk
1/4 cup peach syrup
Preparation
On a bowl add the eggs, vanilla, batey turbinado sugar and mix until they fronth
Sift the flour through a sieve and mix with folding movements
pour the mix on a bowl and cook on the microwave for 3 minutes
On a bowl mix the evaporated milk, condensed milk and the peach syrup (this will be use for saking the cake)
on another bowl mix the heavy cream, batey pure cane sugar and vanilla beat until it reaches a creamy consistency.
When the cake is cooked cut it in half into equal parts.
Add one part of the cake to a dessert mold, soak it with the soaking mixture, add one layer of the filling and slices of peaches.
Add the second part of the cake, soak again with the mix, add one layer of the filling and decorate with slices of peaches.
